WinkelPresse WPX 3 for the extraction of juice from apples at Kelterei Krämer GmbH

The special climate of the Odenwald and its unique orchards are the basis for the high-quality apple juices and ciders produced by Kelterei Krämer. Since 1928, they have been pressing apples with love and care according to traditional recipes. The Krämer winery is a third-generation family business and can look back on a long tradition. Tradition meets innovation, because combined with modern pressing and production technology, the cellars of Kelterei Krämer produce ciders and a wide variety of fruit juices of first-class quality. Among other things, the popular “Bembel with Care” — a cider available in various flavors in designer cans — is produced there. To keep it that way, Managing Director Stefan Krämer and his team opted for juice extraction technology from Bellmer.

Since the 2023 season, an WinkelPresse WPX size 3 for a nominal output of up to 20 t/h of apples — still in test operation at the time — has been in operation at the winery in Reichelsheim. Thanks to its unique process technology with up to 6 juicing stages, an optimum yield is achieved.

The sophisticated, patented process technology, in particular the slowly increasing pressure, ensures gentle mash treatment and enables the processing of a particularly thick mash cake. The increased belt tension in the pressing zone and the increased self-filtration effect of the mash cake ensure optimum yields with low lees content in the juice. Short pressing times largely prevent the oxidation of phenolic and aromatic fruit components and enable the production of high-quality premium juices. A sorting table for apple selection and an inclined conveyor elevator to the infeed hopper of the BAC mill have been added to the scope of delivery. The BAC mill is specially designed for crushing fruit before pressing on belt filter presses. It operates with virtually no wearing parts and requires very little maintenance. A BELLMER vibrating screen BVS for the final juice filtration, a pomace screw under the WinklePress and the control/automation technology for all components complete the scope of delivery.
